Oltresole forest honeydew honey is an Italian artisanal product obtained from beehives located in pristine woods in northern Italy. The product is stored in special silos to maintain its organoleptic quality and is transferred to the jar only at the last moment before being consumed. With the typical smell of caramel and bark and dark amber color, it has an aromatic creaminess: Oltresole forest honeydew honey contains all the flavors of the woods and mountains of our territory. It is a less sweet and more spicy artisan product than traditional nectar and is therefore the right alternative to experiment with new taste combinations. Ideal for spreading on hot bread in the morning but especially for pairing with aged and salty cheeses to create an interesting flavor contrast. FUN FACT: honeydew honey is obtained precisely from honeydew and not from a nectar. Honeydew is a sugary and sticky substance that forms on the vegetation, in particular on the leaves of trees in the vicinity of colonies of aphids and other insects that feed on the sap of these plants. The bees then collect this substance and process it, transforming it into honeydew honey. The small insects that produce honeydew are found mainly on the leaves of Linden Oak Maple and Fir. Generally this is used by bees in periods or in places where the production of nectars is scarce. Honeydew honey is also called forest honey precisely because it is a product that generally comes from woods and forests.
