The finish is done in Oloroso de Montilla barrels, not in Jerez barrels. The difference is significant and this finish is unusual, if not unique, for this price range. A modern and intriguing way to demonstrate what whiskey can be. A new style of Irish whiskey for new Irish whiskey lovers. We chose Pedro Ximénez's beans, the bodega, the wines, the barrels, the cooper – all from one small Spanish village (most of our competitors buy the barrels in the bulk markets of Jerez). Nose: Light but rich, with black fruits (cherry, raisin, fig), notes reminiscent of Christmas pudding, lemongrass and a touch of nutmeg. Palate: Soft and supple in the mouth, aromas of caramel, honey, peppercorn. Dried fruits are also present, accompanied by maraschino cherries and a pinch of brown sugar. Finish: persistent notes of red spices with a hint of almond to close this complex Irish whiskey. Recipe: A single grain whiskey made from locally selected malted barley and organic corn.
