Aged grappa. The different grape marcs are left to ferment together for 30 to 60 days. The whole is then distilled by discontinuous distillation in a copper still, the heads and tails are carefully cut. Aging for more than a year in small, typically Sardinian chestnut barrels, some of which are a hundred years old. A delicate, refined nose, with floral notes reminiscent of the raw material. Unctuous and floral on the palate with notes of almond, honey and green apple that fade to give way to a finish with a light scent of vanilla and chocolate. 40% alc/vol
