Pallone is one of the oldest products of the traditional Cosenza fig processing. For the production of Pallone, fresh figs of the Dottato variety are used, which are soft, juicy and rich in pulp. After harvesting, the figs are placed in special trays, cooked in the oven for several hours and stored in suitable containers where they will rest for at least 10/15 days. Pallone is prepared by pressing cooked figs to form a "ball", hence the name. The figs are then flavored with citrus peel, cinnamon and wrapped in orange and fig leaves and finally tied with a raffia thread. Now they are ready to be cooked again: cooking allows the flask to dry well, while still remaining soft and imbued with all the aromas. Uses in the kitchen The Pallone di Fichi is highly appreciated for its softness and aromatic intensity. Characteristic to give as a gift due to its artisanal workmanship, it can be enjoyed pleasantly alone at the end of a meal or accompanied by mature cheeses such as pecorino, or semi-hard cheeses such as taleggio, gouda and goat's cheeses and ricotta.
