Grape varieties: 85% Merlot, 5% Cab. Sauvignon, 5% Cab. Franc, 5% Malbec Manual harvest, HVE3 We let the temperature rise to 30°C for a maximum of 2 days to extract the color and tannins then we regulate the temperature to 24°C in order to extract only the natural richness in polysaccharides and glycerol (which give fat) and aromas of fresh fruit. Then at the end of the alc. fermentation, the maceration will be stopped at 10 days so as not to extract too many tannins but to make a fruity wine, light in tannins but very fleshy, deep and very fresh.
