BORDEAUX PDO White Wine The harvest is preferably carried out in the morning (low temperature). Arrived at the cellar, the berries are pressed. The juices obtained (1st juice and 2nd juice per press) are placed in stainless steel vats. 4 or 5 days later, we proceed to settling. Vinification is thermo-regulated (between 15°C and 17°C). After racking, aging on fine lees is carried out. A tasting allows to determine the end of the aging on lees. The wine is then racked. After a period of rest, it is prepared (tangential filtration) in order to be packaged. vintage 2021
