Blend of 75% Sauvignon Blanc and 25% old Sémillon from our best terroirs: sandy Peyron for the Sauvignon Blanc, gravel and clay from Bouché for the Sémillon, Sauvignon on clay in Peyrous. Slow pressing then settling for 24 hours at 12°C before placing in 500L barrels of one wine, with very gentle toasting, and in stoneware amphorae for the other half. Alcoholic fermentation with natural yeasts and malolactic in barrels on lees. Light stirring at the end of the malo.
