This white wine is made from the Madrid-based Malvar variety, originating from vines that are more than 25 years old. The process begins with an average maceration of 8 hours, followed by a static racking that directs the clean must to a stainless steel tank. Here, fermentation takes place at a controlled temperature below 16ºC, extending over 20 days. The wine is then transferred to a storage tank, where it rests before being bottled.
