Albacore white tuna belly - 900g

In the taste hierarchy of tuna, albacore white tuna is undoubtedly the finest and tastiest.   Fished by pelagic line from June to September off the Bay of Biscay, the tuna are brought back alive on the boats then processed exclusively by hand in order to eliminate all waste.   The “best” part of tuna (around 4% of its total weight), incredibly smooth.   A gastronomic experience that must have been experienced!
