Score: 84.25 In the world of coffee, the country that ranks first among producers is Brazil. The most important regions are Espírito Santo, Sul Minas, Minas Gerais, Bahia, Sao Paulo and Cerrado. Brazil NY2 coffee comes from the area known as Baixa Mogiana, in the state of Sao Paulo. The geographical characteristics of Brazil allow large crops to be grown and machinery to be used, while in other countries, the cultivation areas are in mountainous areas that make the use of mechanical means impossible. Baixa Mogiana has some of the most favorable characteristics for growing coffee: it is an area with abundant rainfall, an average temperature of 20º and fertile soils. Each coffee producing country has developed its own classification method, although they all have common points. They are based on grain size and number of defects. Brazil NY2 coffee refers to the classification that, according to the New York Stock Exchange, is of higher quality. As for the numbers 17/18, they indicate the sieve of the coffee, that is, the size of the grain. When we refer to washed coffee, we are talking about the process that the coffee beans went through from the time the fruit was picked until the seeds are ready to be stored. In this case, after pulping, the seeds are washed to remove the remains of the fruit and dried in the sun. The result is a clean and uniform coffee.
