It is one of the main economic engines of the country and is part of its culture. One of the peculiarities of Ethiopia is that there are few coffee plantations. For its cultivation there is the so-called "garden coffee", in which coffee growers plant it near their homes, interspersed with other plants; and the "forest coffee", in which they are planted in forest areas seeking the shade offered by the tallest trees. These practices allow the existence of numerous species of coffee trees (they are called Heirloom), and it is considered organic. Sidamo is a region located in central Ethiopia, in the Rift Valley. “Grade 2” refers to the classification received by washed coffees. Swisswater® is a method of decaffeinating coffee based on the use of water, which causes the beans to “sweat” the caffeine. It is the most respectful system with the organoleptic qualities of coffee (flavor and aroma) since it does not modify them. The caffeine that is extracted in the process is used by other industries, thus being a sustainable practice.
