BLEU DE GEX DU HAUT JURA AOP selection Marie-Anne CANTIN is an uncooked, unpressed blue-veined cheese made from raw cow's milk. The white to ivory colored paste is soft, marbled with fairly pale blue-green molds.This cheese was the favorite of Charles Quint, then master of the region.
