This wine is a daring blend: Grenache blanc, Clairette, Roussanne, Marsanne and Viognier. The vines grow on deep sandy loam soils, which give the wine great liveliness. The harvest takes place in the cool of the night. The juices are sorted according to their qualities and then fermented in stainless steel tanks at low temperature. The wines are then aged on fine lees during the winter. Its lemon color with silvery reflections offers notes of citrus and apricot. The palate presents a nice freshness and a magnificent finish of dried mandarin peel. The balance between gluttony and acidity makes Fontaine du Sud a very good ally in Asian cuisine or in pastries.
