Xylopia Aethiopica Origin: Guinea / Ghana Net volumes and weight: 50ml / 20g / 0.70oz Description: This false pepper is also called, Selim pepper, Guinea pepper, Kili, Senegal pepper, Ethiopian pepper, Sedhiou pepper, Diolas pepper, Ouhleou pepper, Guinea black pepper. This berry is native to different countries on the west coast of black Africa, Senegal, Togo and Angola, but it is also found in Ghana and Ethiopia. The seed has a musky and peppery taste reminiscent of cubeb pepper, then an astringency and fresh notes evoking turmeric and ginger and in the finish spicy notes like in nutmeg. Directions for use: To use it, crush it in a mortar, grind it in a spice mill or grate it with a microplane grater. You will use this berry, to highlight its nutmeg notes and its spiciness, with winter dishes such as stews and any preparation with the vegetables of this season, carrots, cauliflower, green cabbage, celeriac, parsnips, pumpkins and potatoes…etc. Its fresh notes make it a good accompaniment to oily fish and meat such as pork, guinea fowl, lamb or kidneys.
