The wild pepper or pipper borbonese is harvested in Madagascar. The wild pepper grows high up in the trees at a height of 10 - 20m. The fruits are harvested by hand. Harvesting is very dangerous and occurs once a year. The berries look similar to cubeb peppers, but are slightly smaller. The flavor of these little peppercorns is earthy-woody with a slightly citrusy floral aftertaste. The hardly available peppercorns bring freshness to your dishes. Use this rarity like black pepper, grind the grains directly onto the finished dishes. Use them very sparingly.
