Wild pepper from Madagascar - Organic Voatsiperifery

Voastsiperifery can be used both whole and ground grains. It is added before sending and should not be cooked as this kills its aromas. Wild Madagascar pepper or Piper Borbonense is much less spicy than its cousin Piper Nigrum, however its aromas are much more powerful. On the nose before grinding, Voatsiperifery gives off an extremely wide range of odors reminiscent of damp earth and undergrowth with fresh and peppery, slightly smoky notes similar to those of black cardamom. Once ground, this exceptional wild pepper gives off a scent close to fresh sap and wild strawberries as well as notes of cola. It is absolutely necessary to discover the flavors of Voatsiperifery which are far removed from the peppers that we know and are used to consuming. This sublime Madagascar pepper goes wonderfully with a grilled rib of beef or a duck breast, it also adds pep to your raw vegetable platters, your salads and your vinaigrettes. Voatsiperifery is also a perfect pairing with dark chocolate, try crushing a few grains on your chocolate mousse just before serving, it's wonderful. Be careful, however, not to become completely addicted!
