It is made from 80% Lledoner negre (Garnacha tinta) and 20% Lledoner roig (Grenache gris). The vineyards are located on clay-loam soils with a granite subsoil in the area around Vilajuïga. Production and Aging After a 48-hour maceration, fermentation with natural yeasts begins. It is stopped in a controlled manner as soon as about 90g of residual sugar per liter remains. The wine is then reduced to 15% vol. Alcohol enriched. This is followed by two years of oxidative maturation in old oak barrels. Part of the production also serves as refill wine for the in-house solera system “Airam”. Color, Aroma, and Serving Suggestions The wine has an orange-red color with golden reflections. On the palate, aromas of raisins, toast and honey develop. It is ideally served at 6–8°C in small glasses. It goes well with blue cheese, marzipan pastries, nuts or sweet desserts with chocolate or biscuits.
