The Maison des Futailles distillery uses a recipe with rye, corn from Ontario and spring water from northern Quebec. The proportion of rye mash is 10.3%. Special features of the storage process The barrel aging takes place in three stages: one part of the whiskey is aged for eleven years, another for five years, and the third for seven years – including three years in bourbon barrels and four years in North American white oak. This storage gives the whiskey its complex aroma. Aroma Profile and Uses The Wild North's flavor features floral citrus accents, caramel, warming rye notes, oak, and vanilla. The finish reveals white pepper, grapefruit and a hint of maple. This whiskey is suitable both neat and as a base for classic or reinterpreted drinks such as Manhattan, Sazerac or Toronto.
