Grapes harvested at peak maturity and vinified at controlled temperature without any added sulfites or additives. Agiorgitiko is grown exclusively within the boundaries of the Nemea region, where the Nemea PDO wine is produced. During winemaking, the temperature is systematically measured and no sulfites or other additives are used. Then acetic fermentation begins. The result is a vinegar with a distinct ruby red color.
