Iberian lomito Iberian lomito is a luxury charcuterie. It is a muscle located at the front of the lomo, of which it is in some way an extension (along the spine of the Iberian pig). The meat of lomito is much redder than that of lomo and has very marbled parts. The lomito is a rare piece, it only weighs around 800 grams on a 170 kilo pig.
