Tencha Niji - organic Japan green tea

This organic tencha from Kagoshima is an exciting new product. "Niji" (Japanese for "rainbow") symbolizes the wide range of delicate flavors that this tencha has to offer. Due to the strong shading of the tea bushes before harvest, particularly high amounts of chlorophyll, theanine and caffeine are formed in the plant. The bitter tannin content, however, remains low. Tencha is the preliminary stage of Matcha tea. After steaming and drying briefly, the leaf tissue is separated from the leaf veins in the air stream. These flaky Tencha leaves make an exquisite, aromatic, mild and multi-faceted infusion or they are used as a decorative sprinkling spice in fine, experimental cuisine. An ideal culmination of fine dishes and a special kind of taste experience. A rarity with a wonderfully aromatic, mild aroma in the infusion. The fine flakes from full shade tea are otherwise used for Matcha production.
