
We paired our year-old Semi-Brown Rice Medium Miso with Wild Garlic harvested in the Arconce Valley, our local river. Bear's Garlic borders damp, shady paths or hedgerows on the edges of Charolais meadows. We have the agreement of a farmer who does not use any input in his meadows for a 100% natural guarantee of our pickings. Wild Garlic is a milder and more subtle wild garlic than cultivated common garlic. The leaves or the flowers can be picked and eaten, and we choose the young leaves from the first spring shoot at the end of March. The flavors of Bear's Garlic are quite difficult to preserve and an alliance with miso is a good way to have it all year round. Use : This miso can easily be used in salad dressing, in maître d'hôtel butter or as a seasoning for meats, vegetables or soups. Miso preserves and enhances the taste and flavors of the wild plant, its salty side disappears and is thus balanced for direct, quick and simple use while remaining probiotic and natural. Good tasting ! Conservation : Non-pasteurized, KŪRA miso is a living product, which can be stored for a long time by continuing to mature and retaining its probiotic qualities. Store in the refrigerator upon receipt and for several months.
