Our average fresh miso of 1/2 brown rice and unpasteurized soy simply aged three whole years. We find the same flavors, but rounder and deeper on the palate. The color is darker of course. Use : Like medium miso in soups, sauces and marinades. Good tasting ! Conservation : Non-pasteurized, KŪRA miso is a living product, which can be stored for a long time by continuing to mature and retaining its probiotic qualities. Store in the refrigerator upon receipt and for several months. Ingredients : Semi-complete organic rice from the Camargue, organic soybeans from France, salt from Guérande (labeled Nature and Progress).
