
We used Chickpeas from Bresse and Burgundy to produce a fine and sweet miso. The sweetness is brought by a kôji of white rice for more finesse and a shortened maturation of 3 to 9 months only. Use : It is a very versatile light miso for seasoning vegetables, salad or raw vegetable sauces and light marinades for fish or white meat. Of course also for a light and mild miso soup. Loaded with natural enzymes to turn starch into sugar, proteins into savory flavors and improve the texture of fish and meat. Like all misos, Chickpea miso is a concentrate of Umami to bring flavor to your cooking. Good tasting !
