This pasta is made with durum wheat grown on our farm in Ronchères in the Aisne. Our pasta is made using an Italian process that guarantees an exceptional consistency of the dough whether you like it firm, aldente or melting. The drying remains the essential step in the manufacturing process. With us, it's at low temperature for 19 hours!!!
