DUCK RILLETTE WITH FOIE GRAS 150G

Unlike pâté, rillette is a traditional charcuterie made from leftover meat from fatted duck processing. When the Landeses had cooked the breasts, legs and sleeves in duck fat, they put the trimmings, the skins, the small neck bones and the wings in a saucepan and let everything simmer for a long time. They then seasoned the meats and chopped them to obtain a smooth paste, put in a pot, then sterilized. This gave rise to rillettes, also called "fats", which were enjoyed all year round, on toasted bread, or directly in soup. It is this dive into the past that you are about to do again by opening the jar of rillettes that you will find in our Canning Cabinet. These are delicately worked with duck foie gras from our regions, in order to bring additional softness and creaminess to our rillette. The Foie Gras Rillette is a traditional rillette but with 30% more Foie Gras. This gives a melting texture and a particular taste to the product. All our preserves are made by L'Armoire à Conserves with fresh products and meat of French origin, in our small artisanal cannery located in Les Landes. The plus of the product: to eat in a vegetable soup to replace crème fraîche, it's the best! Preparation advice: Refrigerate your rillette for at least 4 hours before tasting; open the glass and eat straight from the pot on a nice slice of bread.
