The term Salmis refers to cooking poultry in a red wine-based sauce. Pigeon salmis is a cooked dish from the South West par excellence. This dish made it possible to use wood pigeons (pigeons), sometimes a little tough, which were harvested from the wood pigeon rack. It is also a meat rich in protein, phosphorus, potassium, sodium, as well as vitamins B3 and B6 (800 µg per 100 g). So no more reason to deprive yourself, all you have to do is prepare your pigeons in sauce, roasted, stuffed, with garlic... Its fine and tender flesh has the particularity of being particularly melting in the mouth and leaving a delicate hazelnut taste. Unlike other red meats, it is low in fat. What little fat there is is on the skin and around the rump. Once the flesh is cooked, these pieces are easy to remove. The pigeon is therefore ideal for people following a diet.
