PHEASANT PASTE 150G

The pheasant is the most hunted game in France. I remember returning home triumphant with its magnificent colorful birds! However, poorly prepared, or too old, its meat is often dry and does not lend itself to roasting. So the solution was to make the grandmother's pâté. A family recipe that my grandmother made regularly with pheasants brought back from hunting. Often dry, pheasant meat marinated in Armagnac produces a delicious pâté with a subtle and delicate taste. To be enjoyed as is on a nice slice of bread, with a little Paris mushroom in vinegar. All our preserves are made with fresh products and meat from France, in our small artisanal cannery located in Les Landes. Tasting advice: Put your pâté in the refrigerator at least 4 hours before tasting, open the verrine and consume directly from the jar on a nice slice of fresh bread (ideal for an aperitif). You can enjoy it with a small Paris mushroom in vinegar for a unique flavor. You can present it very well on a charcuterie platter, it will go perfectly alongside a delicious country terrine or / and a tasty duck rillette.
