Classification: Puglia I.G.P. Black of Troy. Grapes: 100% pure Nero di Troia. Production area: province of Foggia. Training system: espalier. Harvest period: second and third ten days of October. Vinification: the destemmed and pressed grapes ferment with the yeasts present on the skins in steel tanks for approximately 20-25 days. Refines on the noble lees in 225 liter oak barriques for 12 months. Aging: stainless steel – barriques.
