Chive pesto - vegan, 190ml

Vegan chive pesto - fine and spicy: "I come to you like straight from the garden and refine cold and warm dishes with my spicy, onion-like seasoning. Enjoy my fresh aroma!” On the edge of the Spessart, wonderfully aromatic chives grow on healthy soil. The young plants are grown in our own nursery and cared for for several weeks before the little plants are carefully planted in the field. After about 7 weeks, during which the chive plants are watered regularly, April is the time for the first harvest - before the chives start to bloom. The chives are then allowed to unfold in all their splendor and now offer a richly laid table for wild bees, bumblebees, butterflies and many other insects. After flowering, the chive field is harvested again. The stalks and blossoms are used as a brew and given back to the soil to strengthen it. The chives can be harvested two more times a year before they retire to push their tops through the ground again the following year. Our herbs are exclusively cultivated and fertilized in a natural way. Neither chemical nor animal fertilizers and no pesticides are used here. In our natural production, only the tubular leaves of the chive are processed into a spicy-aromatic chive fresh herb sauce. There are only a few hours between harvesting and processing, so that the stalks of chives do not dry out and lose their aroma and valuable ingredients as a result. In contrast, preserved in olive oil and rock salt, the chives can retain their full flavor for a long time and give us their wonderful aroma all year round - a small herbal greeting in a glass. Like all our food, our chive pesto is vegan, which is why we don’t use Parmesan for it.
