This well-balanced coffee, powerful and long in the mouth, with notes of liquorice and chocolate, will take you on a journey to the great forest of Central America. Species: 100% arabica Variety: Catuai, Bourbon red Altitude: 1300 - 1800m Harvest: December to March Process: Washed IN REGARDS TO This coffee comes from several small plantations on the land of two cooperatives in Honduras, in the region of Copan in the northwest of the country and in that of Marcala further south. The altitude of these regions, between 1,300 and 1,800 m, is ideal for growing a Grand Cru coffee. The coffee plants are grown under shade, which allows good development of flowers and fruits, thus preserving the soil with a supply of organic matter thanks to the fall of the leaves. The cultivation is done according to organic methods, with the use of decomposing pulp, marine guano and other natural fertilizers. Many aromas are concentrated in the grain thanks to the manual picking of very ripe fruit. This washed coffee is then slowly dried in a ventilated greenhouse, on several levels for optimal quality.
