JAMAICA PEPPER - eco

Jamaican pepper is a spice native to the island of Jamaica in the Caribbean.

Contrary to what its name might suggest, it is not a pepper, but rather a dried berry from the Pimenta dioica tree.

Allspice berries have a warm, sweet and spicy flavor and aroma, with notes of cinnamon, cloves and nutmeg.

This is why it is often used in Caribbean cuisine to flavor savory and sweet dishes, including marinades, stews, sauces and desserts.

Jamaican pepper is also known as "all spice" because of its taste that is reminiscent of several other spices at the same time.   Jamaican pepper is one of the spices that make up gingerbread.

It flavors cakes, compotes and chocolates and chutneys for sweet and sour combinations.

But its berries are widely used for marinades for shellfish and fish (the Swedes use them for herring) or for marinades for meats intended for barbecue (jerk cuisine in Jamaica).

The leaves of the pepper myrtle, the tree that produces the berries, can easily replace bay leaves. Fragrant but not spicy, it goes perfectly with all kinds of meat (game, marinades, poultry, etc.), sauces, rice, fruits, compotes, flans, etc. Fragrant but not spicy, it goes perfectly with all kinds of meat (game, marinades, poultry, etc.), sauces, rice, fruits, compotes, flans, etc.
