Artisanal Cured Sheep Cheese with Truffles and Mushrooms, Gourmet & Chic

450gr It is a 450 gr semi-ripe cheese that has matured with 3% black summer truffle and mushrooms. It is made with healthy sheep's milk, which grows in the mountains of Aguilar de Alfambra, Teruel; the sheep at 1,200 m high, drink spring water and graze where rosemary, thyme, lavender and lavender grow. With this life profile, its milk has a high percentage of fat and a good aromatic level. We love it with some wines and some toasts. Product description In its amanuense elaboration, the milk is pasteurized and the rennet is cut to a fine grain (size of small rice). A minced mixture of 7% truffle 50% mushrooms with salt and pepper is added to the molds and it is refrigerated to mature. During its maturation, every 10 days the exterior is reviewed with a sponge impregnated with extra virgin olive oil, in order to keep only the desirable fungi. The result is a unique cheese with a suggestive color, that tastes like good cheese, with an elegant silky texture on the palate, and tastes and smells like truffles. Pairing: These cured cheeses are fantastic with white and young red wines, but we never say no to a premium cava.
