White teas are usually only known from China, but the processing methods are now also used in other origins. The hill tribes in northern Vietnam carefully harvest a leaf and a leaf bud by hand. These are air-dried for several hours and then undergo a slight fermentation before they are finally dried at 110 ° C. The result is a wonderfully fruity and very low-tein tea that can also be drunk in the evening.
