Cardamom is the fruit of the cardamom tree, mainly harvested in India, in the state of Kerala where it is queen, and in Central America, in Guatemala. It comes in the form of a green to yellow capsule depending on the maturity which contains about fifteen brown-black seeds. Whole Green Cardamom has a sweet, lemony aroma, with hints of mint and eucalyptus. It has a warm and spicy flavor with sweet and floral notes. Whole green cardamom pods can be used whole or ground depending on the recipe. The pods can be infused into hot drinks, such as tea or coffee, or used to flavor meat, fish and vegetable dishes.
