
Vadouvan, one of the only blends that is not made in the workshop, and for good reason it is assembled by our producer in Pondicherry, India, in the traditional way in oily pieces and not in dry powder. Vadouvan is a mixture of condiments and Indian spices. It originates from Pondicherry, and was once a South Indian recipe called Vadavam, which consists of small spice balls made from sun-dried onions and seasoning traditional dishes. Vadouvan is a blend with very mild, unique, rich, very aromatic and not too spicy flavors. This mixture is composed of Onion, Garlic, Sesame Oil, Cumin, Curry Leaf, Mustard Seeds, Urad Dahl (a variety of lentil), Fenugreek, Turmeric, Fennel , Asafetid and Salt. The Vadouvan is eaten with mussels marinières or baked fish. Like a curry powder or paste, it can be used with meats in sauce.
