
This 48% milk chocolate consists of Criollo and Trinitario. Its taste is reminiscent of caramel, is slightly cinnamony and has hints of malt. The plantation, located in the Ambanja district, is located in the so-called Sambriano Valley. The river of the same name, in the north of Madagascar, winds through the valley towards the Indian Ocean. Around 600 cocoa farmers grow the cocoa together. Due to good quality cocoa and increasing demand, cocoa farmers can achieve higher prices. This enables the farmers and the cooperative to work in an environmentally conscious and sustainable manner and to provide good care for their families. What is special is that the farmers do not all work on individual small plantations, but work together on a single plantation. This enables better communication, faster processes and central fermentation and drying. Fermentation takes an average of 6 days, after which the beans are dried for 1 to 2 weeks and sorted by hand. The main cocoa harvest takes place between October and January. The particularly mineral-rich and fertile soils enable the cocoa to have an outstanding quality and variety of flavors. In addition to cinnamon aromas, the cocoa also impresses with subtle milky aromas and light nuances of caramel and malt. The typical cocoa aroma is also clearly noticeable. The plantation was bought by Bertil Åkesson from the government of Madagascar in 1998. Until then, the plantation was in state hands.Åkesson ensured fairer working conditions and introduced clear quality controls and expanded sensibly standardized processes. The quality of cocoa has been and continues to be gradually increased, which has enabled it to attract a wider audience over time. In the region, along the Sambriano River, coffee, peanuts, pepper and vanilla are grown alongside cocoa.
