Our new range based on smoked fish is prepared on the island of Yeu in Vendée (85), by Quentin in the last cannery on the island. Albacore white tuna from Vendée and Breton fishing is cut then salted by hand before being cold smoked in beech wood. The pieces of smoked tuna loin are cut by hand then candied in sunflower oil with a pinch of pepper to guarantee an authentic taste.
