
Introducing 'His Majesty' the Sicilian eggplant caponata! It is one of the typical dishes of Sicilian cuisine par excellence, but there are countless variations served on tables all over the island. More or less vinegar, with or without pine nuts, there are those who even put peppers in it. A vegetarian dish but very rich and with a unique flavor, the aubergine caponata is characterized by sweet and sour. This is the variant of my family, the only one that really satisfies me, so much so that I never order caponata in a restaurant because I am invariably disappointed. The aubergine caponata is a respectable appetizer, but if you want to use it as a main course, it is ideal with cutlets, meat or fish, but also with simple, grilled swordfish.
