Mountain Pepper

In a very remote region at the foot of the Himalayas grows one of the rarest spices in the world, grapefruit mountain pepper. The bushes, which can reach up to 5 meters in height, grow wild and are laboriously harvested by a cooperative of farmers. After harvesting, the collected berries are dried in special dryers. Botanists disagree on whether the grapefruit belongs to the laurel or rue family. The pepper combines unique flavors of grapefruit, lime, lemon balm and pomelo with a subtle to mild spiciness and subtle bitter notes. Combined with other peppers, it creates a unique blend of spices. Mountain pepper should always be freshly ground or mortared. It is also recommended to add pepper to food only at the end of preparation. Taste: Intensely lemony, with aromas of grapefruit and lemon balm, slightly spicy. Dishes: Fish, poultry, seafood, desserts, fruit, cakes and pastries, seasoning mixes.
