The grains are left to dry without the skin, but with some of the fruit flesh still present. When dried, the beans will take on a viscosity similar to that of honey, hence the name Honey, before being completely dried and ready to be roasted. In addition to being beneficial in terms of taste, drying Honey saves a lot of water normally needed to process coffee cherries. It is therefore one more gesture for the environment. This coffee will give you delicious coffees in automatic machines, a syrupy body, a pronounced sweetness and a hint of tropical fruit acidity that will enhance your cup. A coffee that will please lovers of very good coffees, it is in any case one of our roaster's favorites!
