"The first Cancello to be presented honors the colors of dawn, its perlage is inspired by the pink nuances that the sky takes on during the early hours of the morning. Our Rosé is obtained from carefully selected Merlot grapes, pressed and left to macerate on their peels. After just one day of maceration, 15% of the must is withdrawn to start the white vinification that will lead to the Rosé. Fermentation takes place at a temperature of sixteen degrees for ten days. The wine is then decanted and left on its fermentation lees, activated weekly through a careful and delicate manual battonage, to give an intense aroma. Cancello dell'Alba is a fresh wine with delicate fruity aromas, perfect for moments of conviviality. The aromas given by the white-fleshed fruit seduce the palate, releasing the sweetness of the peach, while its red-fleshed fruits satisfy the palate, releasing the flavor of the strawberry.
