What then Persia or Mallorca? Some of our product names can cause the inclined connoisseur to frown. But it's easier than you think: our organic limes come from the Germans' favorite island, hence "Mallorcan" and in addition to the Persian lime (Citrus x latifolia) there is also the Mexican lime (Citrus x aurantiifolia). These are two different hybrids that differ in appearance and in the composition of their essential oils: the Mexican lime is only about the size of a table tennis ball and contains many seeds, the Persian lime is larger and seedless. Investigations into the composition of the essential oils have revealed sufficient differences to explain the different smell and taste of the two types of lime. Everyone should find out for themselves which one is preferred. We finally settled on the Persian lime, which we carefully macerated and then slowly distilled once the extraction was complete. The result is a top spirit that – although also suitable for enhancing a caipirinha, daiquiri or mojito – with its subtle bitter notes accompanied by sweet citrus aromas actually tastes like a cocktail in itself. Incidentally, limes are - contrary to popular misconception - not green lemons, but an independent type of citrus, and also turn yellow when ripe. The adjective "Persian" is probably due to the distribution route from Asia via old Persian trade routes to Europe.
