
100% white Carignan. This is an old and rare grape variety typical of Languedoc. This late variety is harvested at the end of September, it produces large grains and has a low alcohol level. The grapes are harvested from sixty-year-old vines which escaped being uprooted in the 1980s because they were given as wedding gifts! An energizing, mineral and fresh white. The color is golden with silver highlights. The nose is delicious, mixed with white peach and chalk. Subtly vinified, the stay in demi-muid brings roundness with a nice richness, to which are added lively citrus notes (lemon zest, kumquat). An invigorating finish, a thirst-quenching white wine. Vinification: Grapes harvested by hand, spontaneous fermentation with native yeasts. Fermentation and aging in demi-muids for 10 months (600L barrel of 8 wines). Quantity limited to 2,500 bottles.
