This is the pork loin, macerated in spices, then matured slowly in a dryer. The slices of lomo are vacuum packed, 10 to 14 slices (100 to 120 gr). Tasting advice: it will perfectly complement your aperitifs, but it will also be ideal for making up your plates of hors d'oeuvres.
