Teff flour is an ancient grain originating from Ethiopia where it is used to make pancakes. It is resistant and requires little water to grow. Light brown in color, Gojo's teff flour has a slightly sweet taste that is close to nutty. It has a high protein content and is very rich in calcium, iron, magnesium, potassium, vitamins A and B6 and dietary fibre. It can be used alone or mixed with other rather neutral-tasting flours such as rice or cassava flour. It is easy to make bread and can be used to make breads, cakes, blinis, cookies... GI: 45
