A cheese made for dessert.    With an artisanal curing of more than 45 days, this cheese is immersed for a time in a Pedro Ximénez wine. 
This gives its rind a characteristic brown color, contrasting with its ivory white interior, and an unmistakable aroma of the famous wine. Its rind is edible, so when it comes to consumption we achieve a creamy flavor with a perfect mix of sweet and salty. 
It is made with freshly milked and pasteurized goat's milk, thus preserving all the spontaneity of wild flora and the outdoors.    Recently awarded the gold medal in the prestigious Frankfurt International Trophy 2023 competition, bronze medal in the World Cheese Awards 2022-23 and First Prize at the Trujillo National Cheese Fair.
