Slow. Shift down a gear. A mushroom cannot be rushed. He takes the time he needs. In our case, a mold takes over part of the preparation: Aspergillus oryzae is our helper in the fermentation. Because each of our products contains at least one fermented ingredient. Unless the whole product is fermented right away.
