Pumpkins are a group of Eurasian cultivars of the pumpkin, a plant of Mesoamerican origin that arrived in the Old World during the Columbian Exchange. They would have been introduced to Japan by Portuguese navigators, and despite their current presence in French gastronomy, they would have reached Europe from Japan only late (a Japanese family would have brought this vegetable to France only in 1957). These first pumpkins, then called “Hokkaido sweet pumpkin”, spread quickly and widely in European gardens. It is from the latter that the variety called “French Potimarron” develops which is today one of the most cultivated in vegetable gardens with the Japanese varieties “Uchiki kuri”, “Akaguri” and “Red kuri”. Cucurbita moschata or butternut squash, the variety to which butternut squash belongs, comes more precisely from the northwest of Colombia and Mexico. It is still very popular in South America, where it even garnishes empañadas.
