Our PASANDA MASALA spice blend is a spice preparation used in Indian cuisine to prepare a dish called "Pasanda". 

Pasanda is traditionally prepared by marinating pieces of meat, usually chicken or lamb, in a mixture of spicy yogurt and pasanda masala. 

Once marinated, the meat is cooked in the pan or in the oven until tender and juicy.   The exact origin of pasanda masala is not clearly defined, but it is closely associated with the Mughal cuisine of India. 

Mughal cuisine dates back to the era of the Mughal Empire, which ruled much of North India from the 16th to the 19th century. 

Mughal cuisine is known for its use of rich spices and complex flavors.The word “pasanda” itself comes from Persian and means “favorite” or “chosen.” 

It is said that pasanda dishes were initially prepared for the Mughal nobility and were part of the luxurious dishes served at the imperial court.   Pasanda masala is therefore considered a traditional spice blend of Mughal cuisine. 

The spices used in masala have evolved over time depending on regions and personal preferences, giving rise to different variations of the blend. 

However, some commonly used ingredients in pasanda masala include spices such as coriander, cumin, cardamom, cinnamon, cloves, black pepper, turmeric, and red chili pepper. 

These spices are blended to create an aromatic and fragrant blend that adds a rich, complex flavor to the pasanda dish.   Pasanda masala spice blend can also be used in other Indian dishes, such as curries and biryanis, to add a spicy, savory flavor.
